Smocha's lazy crock pot chili verde



Smocha's lazy crock pot chili verde



2 lbs boneless pork shoulder, cut into chunks

(I used 4 butterflied pork chops .....= 8 boneless chops) way less fattening.

2 teaspoons ground black pepper
2 teaspoons garlic powder
2 teaspoons onion powder
1/2 teaspoon garlic salt
1/2 teaspoon salt
1/2 teaspoon oregano (Mexican if you can find it)
1/2 teaspoon ground cumin
1 teaspoon minced dried garlic
1 diced onion
1 diced bell pepper
11/2 cups water
2 teaspoons beef bouillon (or 2 small cubes)
small can of green salsa
2 small cans chopped green chilies
1 large can green enchilada sauce
1 can rotel
serve with :
fresh cilantro
shredded lettuce
shredded cheese
tortillas
elyucateco habanera sauce (if you want it HOT!)


Mix all seasonings together in small bowl
Mix Beef Bouillon with hot water and pour in crock pot first.
Mix seasonings with boullion
Add everything else
Cook on high about 6 hours ,until pork is fall apart tender (stir occasionally)
Mash pork (to shred) with a potato masher

Happy Birthday to me


Ola ya'll ,

I'm running late , it's "half of a half" day! You know, my shoppin' day :)


So this is gonna be a quick one. I just wanted to do a little recap of my birthday hen party.


My phone rang and it was a Calif. area code ,so I assumed it was Desert Dirt Diva until I hear a beautiful singing voice start singing "Happy Birthday"
DDD still has pneumonia so I knew it couldn't be her singing. lol
It was my friend Kim. :)



I made a cake and some chili verde. All my Arkansas friends were there except Floozie1. (she missed the message)
Eva,Floozie2,Nosy and Eva's daughter Jade.We happy houred and ate . The chili verde rocked! (I'll post the recipe tomorrow)


Then we were planning to take glamor shots of each other. Nosey and Floozie2 scattered like roaches and said "NOT ME!"


They really should have stayed for that part .Jade did a great job as our photographer. She was just like a real photographer,telling us "ok, hold your chin up" "look at her" "put the hat over one eye"
We had a blast too.
If you know me, you know it's nearly impossible to take a good picture of me.She would have made you guys look really good!










Hubby sent me these beautiful flowers.















Cavuto LOVED them.






















He gave the day 2 silver paws up!

Sometimes life is hard.......

Ola ya'll ,


As some of you know a couple days ago one of my neighbors shot and killed herself right out in our parking lot. I was going to tell you all the details of what happened ,but I just don't think I want to.


Suffice it to say ,it was very upsetting for everyone, especially a young girl who had driven by and seen her standing there.
As she stood there in tears, she told me "I thought she had a gun in her hand ,but then I told myself Oh it's too small ,it can't be."



When she drove back by a couple seconds later the lady was on the ground,gun lying next to her.
I wish I had thought to tell her that even if she had called the police the first time she'd gone by,they would not have gotten here in time to stop her. I hope that young girl does not blame herself .



Also even if I had been sitting in my office at that moment ,she would have been too far away for me to have stopped her either.


Having been through the gunshot suicide of my last husband, I have to wonder how bad the repercussions will be for her family.I hope and pray that things go smoothly for all of them.






Rest in peace little lady.

As for other news......oh yeah, I don't have any :)


My big plans for today are to inventory my freezer and pantry ,so I can eat up what's here before I leave for England. Then a fascinating trip to the library.


When everyone first leaves it's always like depression city around here. The thought of taking the boat out today sounds like too much work .I suppose it will depend on how bored I get.



I was right in the middle of an absolutely hideous dream when Cavuto woke me up this morning.
My husband had married an additional wife,planning to be married to both of US! Naturally SHE was all skinny and gorgeous, with no flab to hide. I was just realizing that my love life was pretty much over when Cavuto woke me up. YIKES!
Thanks for getting me out of THAT nightmare.



My hair is like a rats nest of dead straw. (you know you want me)
Guess I'm off to wash it.

Stuff stew.....................

Well today's the big day .Hubby goes back to England without me :(

The other day we took the boat out and stayed out there until wayyy past dark. Floozie2 and Lake Farmer came out on their boat as well. I finally took my camera out.

This sadly makes me realize that summer is nearly over. I'm not sure how often I'll be taking the boat out for the rest of my time here. I 'll have tons of work to do to get ready to leave.I'm positive that Cavuto will be no help at all.



Speaking of the little rotten stinker,he has become more spoiled than EVER! He begs for his walk in the stroller day and night. Hubby has even walked him a few times ,in the cover of darkness of course. I wish I had a picture of that.












Too bad we can't take his stroller with us . I could fold it and get it on the plane but our house is so dinky over there ,there would be no where to put the humongous thing.
I'm probably going to find a regular baby stroller at the thrift store (over there) and he'll never know the difference. Won't my British neighbors think I'm the crazy American , walking my cat?


Monday is my birthday . My friend Eva's is the next day so we are planning a hen/pity party for ourselves. Yes, I know ,we're sooo exciting.

snore......snore.......oh ..Hi....

Hey ya'll ,


Yes,I'm still alive. My "vacation" is almost over.


The thing I hate about this house is having my office in the guest room.
When it's my own kids in there, I have no qualms about barging in at 6 A.M. ,cackling at one of them spooning the other one and saying" sorry ,I have to update my blog."


But, when it's someone other than my kids I can't really do that. "Oh sorry, you're naked, don't mind me...I just need to update my blog."



The last 4 days my husbands uncle has been here visiting .

Sadly ,we did nothing too exciting. We have come to the conclusion that every restaurant in this town sucks.



They have a vast selection of "fried food" restaurants.Fried catfish,fried tomatoes,fried potatoes,fried meat, fried pickles,fried pie,fried okra and how 'bout some cholesterol with that?



There's a handful of places with semi decent food,only they come with a hefty price tag.It's fine to spend a hundred bucks on dinner once in a while but not something we want to do a few times a week. While uncle was here we all decided to take the boat over to this certain place with a pretty good atmosphere but mediocre food.



He ordered a tuna steak and I ordered grilled cod. Both of our plates arrived looking like they were bearing a slab of boiled rubber.



"um, excuse me, we can not eat this."



They took it back but not before the waitress argued with everyone at the table.



We spent the rest of the days eating at home, which if I have to cook and do dishes I'm no longer feeling that "vacation-y" vibe . Just sayin'.



We racked our brains last night trying to think of a good place to go. But nooooo. We wound up eating leftovers. I want dinner out tonight ,I don't care if it's Sonic!



All our company is gone now and the house feels pretty empty.It always does when everyone first leaves.But not quite the gaping hole it will be in a few more days, when hubby goes back to England without yours truly.



After changing my flight to August 25th,we were then informed that animals can not fly until after Sept. 15th. So yippee, Cavuto and I get to wait another month before we go.



*sigh*



This summer has been so unusually lame compared to our normal that I have barely taken any pictures. That is unheard of for me. I got nuthin' ,not one picture to stick up here. Sorry about that.
As if this post isn't boring enough.

If it weren't for bad luck ,I'd have no luck at all....

What do you get when you take a week of thunderstorms and pouring rain, a grouchy, jet lagged husband, two bored kids(one with strep throat),$500 dollars worth of groceries ,one crazy cat and a constantly cooking and /or cleaning mom?



The frekin' vacation of a lifetime! NOT!!!!!

Remember THIS crap from a few weeks ago?



It's started already. My nerves are shot. I am terrified that something will go wrong again when I return to England.



Which was supposed to be Aug. 17th.
Well, naturally ,when we got my ticket back in January......we didn't think to check what day of the week that was. Turns out it is a Monday. Meaning there are no Vets open on the Sunday before to do Cavuto's (unneeded) tick and tapeworm treatment,which England requires.







After much calling around and begging, and offering to bribe someone to come in on a Sunday we finally gave up and had to change my damn
ticket. (Now I will be waiting 8 days longer to have my nervous breakdown.)



Oh and that will only cost us $300 smackers.




.....Insert stream of cuss words here......


Today.....I call to get Cavutos plane ticket. (they won't allow you to book it until it's a few weeks away from the travel date)


Ring..ring.... "Hello , I'd like to book my cats flight for August 25th,out of Dallas."


"Oh, sorry ,we do not fly ANY animals out of Dallas until September due to the heat restriction."


Well, isn't that f'n special? Why did no one bother to tell us that before we paid 300 bucks to change the ticket the first time????????


Now, we get to PAY to change my ticket AGAIN and then what if Dallas has a heatwave in September?


UGH! Pass the xanax please.
