Just a housewife.......






The other day my spouse went to the bank to do some banking business. He called me on the phone and said "The lady from the bank is going to call you, she needs some info from you."



Ring...ring....



"Hello"



"Hi ,this is the bank lady. I need to ask you a few questions. What is your drivers license number? "



Rattle off dl number



"How long have you been retired? "



"I'm not retired,I'm a housewife."



*Bank lady stutters and stammers*
"How long have you been just a housewife?"




Oh NO she didn't. She just totally crammed her un-PC foot right in her mouth.
She realizes what she has just said to me and stammers some more. She finally blurts out "I was trying to not say "how long have you been unemployed."




FAIL Bank lady. Go back to PC classes, surely they have them down there at the bank.




Seriously ,what kind of job could I have that would allow me to take time off as needed, to follow my husbands schedule of travel and living in other countries ? Hmmmm??




I am just a housewife for good reason honey, and I'm damn good at it too .

My hubby goes back to England in about a week or so.
The time has gone by too quickly.



The cats and I will not be able to go until after mid September, due to the heat embargo. pets can't fly until then.




We have been too busy to find a new house over in the Uk, so back to our cracker box we will go.

We had a little dinner party the other night to thank our awesome friends and neighbors for dealing with our nice frozen/burst pipes this past winter .

We had prime rib with garlic cream sauce, mashed potatoes, squash casserole ,blueberry coffee cake and Floozie2's awesome brownies.

Chicken With Garlic Cream Sauce

  • Made the sauce for the prime rib (I’ve had it with chicken too. It’s awesome!)

  • Prep Time: 3 mins
  • Total Time: 15 mins min
  • Serves: 4

Ingredients

    • 4 chicken fillets, pounded
    • 2 garlic cloves, crushed
    • 1 tablespoon grainy mustard
    • 300 ml thickened cream
    • 1 cup chicken stock
    • 2 tablespoons parsley, chopped

Directions

  1. Cook fillets until brown, place in an ovenproof dish covered with foil and transfer to the oven to keep warm.
  2. In the same pan the chicken was cooked in, add garlic and stir over heat until fragrant.
  3. Stir in the mustard, cream and stock.
  4. Bring to the boil and simmer uncovered for approx 10 minutes until sauce reduces and thickens.
  5. Stir in chopped parsley.
  6. Serve fillets topped with garlic cream sauce and your choice of vegetables.

Blueberry Coffee Cake

  • Total Time: 1 1/4 hr min
  • Serves: 10

Ingredients

    • 1/4 cup margarine stick, softened (I used real butter)
    • 1 (4 ounce) package fat free cream cheese
    • 1 cup sugar
    • 1 eggs
    • 1 cup all-purpose flour
    • 1 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1 teaspoon vanilla extract
    • 2 cups huckleberries (fresh or frozen, unthawed(I used blueberries) or blueberries (fresh or frozen, unthawed(I used blueberries)
    • 2 tablespoons sugar
    • 1 teaspoon ground cinnamon

Directions

  1. Beat margarine and cream cheese at medium speed of an electric mixer until creamy; gradually 1 cup sugar, beating well. Add egg, and beat well.
  2. Combine flour, baking powder, and salt; stir into margarine mixture. Stir in vanilla, then fold in berries.
  3. Pour batter into a 9-inch round cake pan coated with cooking spray (I use 8in. square pan)
  4. Combine 2 tablespoons sugar and cinnamon; sprinkle over batter.
  5. Bake at 350F for 1 hour; cool on a wire rack.

Squash Casserole

  • Prep Time: 15 mins
  • Total Time: 55 mins min
  • Serves: 1

Ingredients

    • 1 lb squash, cooked and mashed
    • 1/4 cup butter
    • 1/2 cup milk
    • 3/4 teaspoon salt
    • 1 tablespoon sugar
    • 3 eggs, beaten
    • 3/4 cup cracker crumbs
    • 2 cups sharp cheddar cheese, grated
    • salt and pepper

Directions

  1. Mix all ingredients well.

I added one small can of green chilies. Next time I will add a sm. Can of chopped jalapeños too !

  1. cook in 1 1/2 quart casserole dish at 350 degrees for 40 minutes or until firm.

Many thanks for the squash casserole recipe. It is soooo delicious. All the meal was terrific and thanks. You didn't say what kind of squash. Yellow squash? Zucchini? Patty pan? I guess all would work. G5

That creamy garlic sauce sounds so very good, can't wait to try it, I need to fix more chicken @ dinner time the doc's say Jim has to much Iron, weird most people don't have enough Iron!!!

Queen , You got that right! And people wonder why the kids today are such a mess.I'm proud to have been able to mostly be home to raise my kids.Housewives RULE baby!

G5, I used yellow squash,just because I think they're the cutest.

Karen, that stuff is frekin' awesome. It would also make a great base for a curry sauce. Never even heard of too much iron .

OMG! who trained you? has your husband not taught you about identity theft? i hope you know not to give out your ss number as easily? NEVER give out you personal ID over the phone ! EVER!
GO TO the bank if it is that important - MOST - if not all, banks or other businesses will ask for the LAST four - if any of you SS. never your DL - or full SS. WAKEUP.
